THE PROPRIETORS

BF8MARK AND MONICA BREST STARTED THEIR CAREER IN THE FOOD SERVICE BUSINESS IN 1995 WITH A SMALL COFFEE AND DONUT CART. ALMOST RIGHT FROM THE START THEIR HUMBLE VENTURE TOOK OFF. WITH THE COMBINATION OF THEIR QUALITY PRODUCT AND THEIR CUSTOMER FRIENDLY ATTITUDE THEIR COMPANY TRANSFORMED INTO A FULL SERVICE MOBILE FOOD TRUCK BUSINESS, BOASTING AN IMPRESSIVE SIX FOOD TRUCKS WHO ACTIVELY SERVED AND TWO MORE THAT STOOD ON STANDBY. BUSINESS WAS GOOD, UNTIL HUSBAND/CO-OWNER MARK WAS DIAGNOSED WITH BREAST CANCER. AS THE LEAD AND ONLY MECHANIC FOR THE TRUCKS( NOT TO MENTION ONE OF THEIR BEST DRIVERS), THE BUSINESS TOOK A HIT AND AFTER 12 YEARS OF SERVICE CLOSED.

TWO YEARS INTO THEIR ONGOING BATTLE WITH CANCER, THE BREST’S DECIDED THAT THEY WERE NOT GOING TO LET THIS DEFINE THEIR LIVES. WITH LITTLE, TO NO MONEY THEY DECIDED THAT THEY WERE GOING TO RE-BUILD THEIR FOOD SERVICE CAREER, THIS TIME IN THE FORM OF A RESTAURANT. AS AN ASPIRING ARTIST, MONICA LOOKED AT THIS OPPORTUNITY AS A BLANK CANVAS OVERFLOWING WITH ENDLESS POSSIBILITIES. WITH OVERWHELMING PATIENCE AND DETERMINATION, THEY SLOWLY PIECED TOGETHER THEIR VISION.

APPROPRIATELY THEY NAMED THIS NEW VENTURE THE BENT FORK, SYMBOLIZING THEIR PAST, PRESENT, AND FUTURE JOURNEY. AS SO PERFECTLY SAID BY JAMES DEAN, “DREAM AS IF YOU’LL LIVE FOREVER, LIVE AS IF YOU’LL DIE TODAY.”
